The business worked with the local consulting organization Headwater People to learn more about the area’s original inhabitants, a band of Duwamish people called the Šilšulabš, and named the location Šilšul in their honor. Though the building has been remodeled, its original logs and carvings by Northwest Coast artist Jimmy John have been preserved. To celebrate the opening, the new location will also give out free slices to customers from 11 am-3 pm on June 25.

Brendan McGill’s seafood and vegetable-focused restaurant Seabird opened in the former space of his Bainbridge Island restaurant Hitchcock on Thursday, according to a press release. Executive chef Grant Rico’s menu includes Dungeness crab custard, uni French toast, Chinook salmon crudo, sablefish, a “seacuterie” platter, wood-fired halibut, whole roasted yelloweye rockfish, and king salmon, with desserts like seaweed ice cream (!) and honey sorbet with milk granita. The restaurant also features a raw bar with local oysters, spot prawns, geoduck, green sea urchin, Dungeness crab, and more. Drinks range from the “Seabird Old Fashioned” (rye whiskey, sorghum syrup, and wild cherry bark and kombu bitters) to the “Parabolic Martini” (shellfish-rested Highside gin, vermouth blend, and Suze).

After almost 20 years of business, this beloved Little Saigon spot has closed permanently. Owners Michael Creel and Yong Hong Wang cited multiple break-ins and a black market in the parking lot of Ding How Center, where Seven Stars was located, as factors contributing to the closure, saying they felt unsafe. The Stranger‘s Rich Smith previously praised the restaurant, writing that they made his “favorite bowl of dan dan noodles in the city.”
